—Kitashinchi, Osaka. In a quiet corner of this glamorous district stands the long-established restaurant *Hyoutei*. Here, they serve a dish once presented to the emperor—*Yugiri Soba*. 

—As I step inside, an  elegant atmosphere fills the space. A place like this feels perfect for savoring soba in style. Without hesitation, I order the infamous *Yugiri Soba*. 

—Before long, the dish arrives. It looks as delicate as a misty evening sky. And then—there it is, the subtle fragrance of yuzu. Yes, these noodles are kneaded with yuzu bits.

—I carefully lift the noodles with my chopsticks and take a bite. Oh… this is something else. It changes everything I thought I knew about soba. Silky smooth, it glides effortlessly down  your throat . Then, the delicate aroma of yuzu blooms, blending beautifully with the refined sweetness of the broth. 

—This… this is the kind of dish that seeps into your soul. A soba with a noble history, yet simple . , purely delicious.  

—Before I know it, I’ve finished every last drop. 

"Gochisousama deshita."

—A dish once served to the emperor. Now, across time, it lingers in my heart.
